The Il Molino Farm, which has belonged to the Sciuga family for generations, is built around the 18th century farmhouse that represents the heart of the property. Only olives produced on the property are pressed at the farm's mill.
The farm's press, equipped with an innovative method, permits extraction of the oil directly from the pulp of the olive after a de stoning procedure. De stoned oils differ in some chemical and quality characteristics from those obtained from the traditional method which crushes the whole olive with pits.
The olives, picked and pressed within the space of a few hours, guarantee a product full of chlorophyll, polyphenol, and tocopherol, which have an important anti-oxidant function and represent a precious source of vitamin nutrition. The result is an elixir of emerald green shot with golden reflection. The aroma recalls fresh, perfectly ripe olives when they have just been picked, the taste is fruity turning slightly more bitter and piquant in the aftertaste, but lacking the more common strong peppery undertones.

The very best Prosciutto is made by the family company of Pio Tosini, founded by Ferrante Tosini at the beginning of the century and developed by his son Pio for whom the company is named. The company is situated optimally to produce Prosciutto – right along the particular section of the Parma River valley that has always linked its name to this exceptional product: Langhirano.
In its prosciutto, Pio Tosini still uses the traditional ingredients that have always been used: meat, salt, air, and of course, time. A curing time of over 500 days (in comparison to the Consorzio standard of 400 days) produces a slow and even salt penetration, assuring the sweetest hams of uniform texture.
Though there is now the aid of modern technology in its Prosciutto production, it is still the human hand, as was in the past, that does the work at every step: trimming, salting, sugnatura (covering the surface with softened lard and salt), and the deboning - on demand - of the final product. And only first choice meats coming from pigs of selected breeds and raised following the best nutritional criteria are deemed worthy of Pio Tosini's handiwork.

A 24 month Gennari Parmigiano-Reggiano has these main features: friable aspect on the tongue and by sight, the paste is finely nubby, the colour turns from white to slightly yellow. Then when tasting a piece of Parmigiano-Reggiano, the taste evolves in a sweet and palatable balance, which recalls notes of fresh milk, the softness of cream, butter and yoghurt. To savor with a very good full-bodied wine, for example Valpolicella Amarone or Malvasia dry.
At 36 months the Parmigiano-Reggiano has reach very good maturity for his taste and shows the intense balance of parfum and aroma. Fantastic olfactory, tactile and salty taste sensations. The smell of hay, perennial fields and healing herbs permeates where this incredible cheese is born.
This Parmigiano Reggiano is perfectly soluble and nubby, the colour is slightly yellow and the structure is defined clearly. We advise to accompany this Parmigiano-Reggiano cheese with sweet chestnut honey, and a red Tuscan wine like a Brunello.
At 48 months the Reserve Cheese is more compact, uneven and rough with an intense amber colour and more visible white pigments. The flavour is complex and pungent with a 'retrogusto' of hazelnuts, walnuts and chestnuts. It's perfect when accompanied by a wine like Sautern, or with the strong and intense taste of a good Barolo.
A 60 months Parmigiano-Reggiano is extra mature, the flavour is stronger and more intense and spicy notes prevail. Marked with citrus scents and herbaceous aromas, it is tasty but never piquant. The select milk and flavours contribute to develop an elaborate yet elegant cheese.

Oro Nero is produced in the area of Parma made on the Gennari family farm with raw cow's milk from their own herd of cows. This cheese is selected to be Beppino Occelli's best. Testun al Barolo is produced from cow and goats' milk from animals that are free to move around and feed on summer meadows. It is aged for a long time, sometimes for over two years in the Valcasotto cellars, and then it is refined for two more months in Langa vineyards and enriched with Barolo giving its delicacy and its complexity of aroma. “Old” cheeses for “new” flavours, born from the quest for intense flavours that combine well with the prized Langa wines, as well as with Passito or with the latest specialty beers.
It has been considered the best “drunk” cheese in tests conducted by the Slow Food experts.

'Sola' or 'Sora' is a term in dialect meaning 'sole of a shoe'. This gourmet cheese has this name because of its low, flat shape. It is made from an ancient recipe rediscovered in Valcasotto. Each form of Sola Sora has a characteristic mark left by the knot tied in the binding used when the curd is wrung out. Sola Sora is a raw cow's milk cheese with a soft, yielding consistency and a buttery smell. It is ideal accompanied by summer salads and also in fondues.

The original sweetener of Italy. Simmered in copper kettles over an open flame, Saba is the sweet reduction of Trebbiano and Lambrusco grape must. These are the same musts used to produce balsamic vinegar, but for Saba they are reduced through cooking rather than evaporation. TORRONE & NOCCIOLATO
The tradition of Christmas since 1836
Torrone, or known also as nougat, is a sweet with very old origins, born in Cremona, Italy in the 15th century created for a wedding between two nobles in 1441. Today Torrone is still a symbol of times to celebrate, particularly at Christmas.
Its main ingredients are honey, sugar and whipped egg whites which are mixed together and cooked to achieve a creamy consistency. Almonds or toasted hazelnuts are then added and the whole mixture is rolled between two thin layers of pastry and cut into bars. Classic crunchy Torrone and soft Torrone are the two types available as well as chocolate covered.

The dove has always been the symbol of purity and serenity. In Catholic tradition, a dove, after The Flood, flew over the calmed waters returning to Noah's Ark with an olive twig in its beak, to bring to mankind a message of peace.
At the time of the Spanish dominion in Milan the dove became the Easter cake par excellence: in 1552 it appeared, accompanied by an angel, above the Church of Santa Maria delle Grazie to stop its demolition ordered by Ferrante Gonzaga for military purposes. Since then, the gratitude of the city of Milan is remembered with this exquisite cake in the shape of a dove.
These two most prestigious Loison cakes, the Patisserie Colomba "a.D. 1552" and the Colomba with Mandarin from Ciaculli, come with a refined ivory ‘Made in Italy’ box, with a twig of flowers. These Colombe are top of the line, made with fresh cream, fresh milk, fresh butter and natural vanilla from Madagascar. The mandarins of Ciaculli are listed as a SlowFood® Presidia.

The Royal collection has three cakes: the Colomba, the Focaccia and the Veneziana. The last two are typical cakes of the Venetian tradition. The oldest and simplest Focaccia was prepared by bakers or in the houses of peasants according to a recipe handed down for generations. The Veneziana with its spongy hollow-like shape, rich in butter and covered by an icing studded with sugar grains, was enjoyed on the tables of the most important Venetians.
Both the Focaccia and the Veneziane are wrapped in pastel papers with a ribbon and a spring peach blossom for the finishing touch.

In 1865 begins the story of “Gianduia” and its most famous creation, Gianduiotti chocolates which are a mixture of "Tonda Gentile delle Langhe" hazelnuts and cocoa. This is the legendary creation of Michele Prochet and the pastry chefs of Torino, who were the first to combine the two ingredients during Carnival season: hence the name, which is in honor of Gianduia, the typical carnival character in Torino.
